Spaniards and Italians share a defining trait when it comes to food: we are purists about our recipes.
Sometimes, we’re so passionate that we forget the kitchen is a living art, constantly evolving. I’ve personally experienced the wrath of the “Paella Talibans” and although that’s not the subject today, I must confess that any variation of a recipe that improves it or adapts it to a specific market always gets my approval. One day, I’ll write about my crazy adventures with paella!
But let’s get back to the topic: The cotoletta. Without diving into the never-ending debate about the "original" recipe, I can say without a doubt that the best cotoletta I’ve ever tasted was at Italian Touch by Ivano, a small Italian restaurant in Bedford, just a few miles from Milton Keynes.
The visit was spontaneous: after a business meeting, my client invited me to have lunch there. We went knowing we didn’t have much time, but the experience was enough to leave a lasting impression. To start, we ordered "panuzzos" (Italian Sandwich) as appetizers and pizzas for the main course. However, the star of the meal was undoubtedly The Cotoletta.
Absolutely brilliant. Simple, yet masterful. I’d never had it served inside a pizza-style bread, and the result was spectacular. The combination of breaded chicken, fresh lettuce, tomato, and a touch of mayonnaise was an explosion of flavor I won’t forget. I know that purist Italians will raise an eyebrow at the mention of mayonnaise, but honestly, I don’t care. It was sublime!!!.
It was so delicious that sharing it almost hurt to me!!!. Since then, I’ve developed a new culinary obsession, and I would travel any distance to have another cotoletta there.
Additionally, I must mention that this restaurant is worth more than one visit. Although I didn’t have time to try their pasta, I saw some dishes pass by that immediately piqued my curiosity. The decor is simple, with subtle Italian touches, but what really stands out is their focus on offering quality food, complemented by attentive and friendly service.
Here’s my Google review, where I, of course, gave them five stars. Counting the days to visit again.
